Endemic Festival 2025 brings together traditional and signature cuisine in San Miguel de Allende

San Miguel de Allende welcomed traditional chefs and cooks participating in the third edition of the Endemic Festival, which will take place on July 25 and 26 in the municipalities of Irapuato, León, Guanajuato, and San Miguel de Allende.

The festival will take place in 11 restaurants, hosting an equal number of dinners paired with local spirits and wines. These events will conclude the 2025 season of “Guanajuato Sí Sabe,” through which events were held in 21 municipalities across the state with the aim of highlighting Guanajuato’s gastronomy through its dishes.

Endemic Festival Offers Many Surprises

Guadalupe Robles, the state’s Secretary of Tourism, highlighted the participation of professional chefs, restaurant representatives, mezcal and tequila producers, vineyards, breweries, and traditional cooks, who, for the first time, are being given a leading role in the festival.

“It’s wonderful to always be in this city and this festival, which will bring together the value chain of Guanajuato’s gastronomy,” she noted, emphasizing that the intention is to expand this event to more municipalities each year.

For her part, Consuelito Venancio, representing the traditional cooks, thanked the authorities and the chefs with whom they will work: “The essence of the cuisine is not only in the ingredients, but in the soul of those who prepare the food (…) Endemic has become a sustainable product that provides work for those dedicated to harvesting, generating a productive chain, and thus our traditions will not die,” she shared.

Chef Mikel Alonso, Basque ambassador 2024 and a leading figure in signature cuisine, stated that this is not just a gastronomic gathering, but a living encounter where knowledge is shared: “What happens here is more than a culinary experience; it’s an act of respect, listening, and collaborative construction; it’s a return to our roots,” he said.
