The fusion of Guanajuato’s traditional ancestral cuisine, the best chefs from this land of flavor, and the recognition of having a Michelin star will be present in 11 restaurants across the state with the Endemic Festival 2025.
The Guanajuato State Government, through the Secretariat of Tourism and Identity, announced the celebration of the festival, which will take place on July 25 and 26, 2025, in León, San Miguel de Allende, Irapuato, and the capital of Guanajuato.
“The Endemic Festival is a gathering of knowledge, flavors, and identity. It’s a way to reaffirm who we are through what we cook, and to show the world the richness of our endemic ingredients,” said María Guadalupe Robles León, Secretary of Tourism and Identity of the People’s Government.
One of the main objectives of the Endemic Festival 2025 is to unite the traditional cuisines of Guanajuato with the best of global haute cuisine, through gastronomic experiences that bring together traditional cooks, host chefs, and internationally renowned talents honored with the most important global awards, such as Michelin stars, among others.
The experience will include dinners paired with local spirits and wines in the eleven restaurants distributed throughout the four host cities. The experience will seek to reinterpret emblematic products of Guanajuato, such as mesquite, xoconostle, escamoles, garambullo, cajeta, tequila, and wine, among others.
Each restaurant offers a special menu that fuses contemporary techniques with ancestral ingredients. Host venues include Sato Altacia, Lucciano Mar y Parrilla, La Vaca Argentina Sur, and Argentilia in León; TENÉ and Zibu in San Miguel de Allende; Amatxi, Casa Mercedes, Trattoria Terraza, and La Virgen de la Cueva in Guanajuato City; and Bixa Cocina in Irapuato.
The featured chefs include Carlos Gaytán, the first Mexican chef to earn a Michelin star; Mikel Alonso, Basque ambassador for the 2024 season and a leading figure in signature cuisine; and Sheyla Alvarado, recognized for her sustainable practices with a Green and Red Michelin Star.
Also attending the event are Rodrigo Rivera Río, winner of The Best Chef Dubai 2024 and a promoter of northeastern Mexico; Alfredo Villanueva, a pioneer of the gastronomic movement in the north of the country; and David Castro Hussong, one of Mexico’s most influential young chefs.
The Endemic Festival also marks the successful conclusion of the “Guanajuato ¡Sí Sabe!” gastronomic season. 2025, in which, over nine weeks, more than 27 events were held throughout the state, strengthening the link between the tourism sector, local producers, and the Guanajuato identity. This season will generate revenue of more than 100 million pesos.
As part of the program, a masterclass with chef Carlos Gaytán will be held on Wednesday, July 23rd at 4:00 p.m. in the UNITEC Auditorium in León, an opportunity for all those interested in Guanajuato’s tourism sector to be inspired by his career and vision of contemporary Mexican cuisine.
Furthermore, this event coincides with the opening of the Guanajuato International Film Festival (GIFF), making Guanajuato a cultural and tourism epicenter where film and gastronomy intertwine.
